Ingredients
- 65 g, 1/2 cup whole wheat flour (3/4 cup whole wheat flour, 100 g)
- 65 g, 1/2 cup all purpose flour (3/4 cup all purpose flour)
- 1 tsp. baking powder (1.5 tsp. baking powder)
- 1/2 tsp. salt (3/4 tsp. salt)
- 1/8 tsp. cinnamon (1/4 tsp. cinnamon (scant))
- dash of nutmeg (generous dash of nutmeg)
- 2 Tbl. melted butter (3 Tbl. melted butter)
- 1 egg (2 eggs)
- 1 cup buttermilk (1.5 cups buttermilk, 365 g)
- 2 bananas (if small) (3 bananas (if small))
- 1/4 cup walnuts, or pecans (3/8 cup walnuts, or pecans)
Instructions
- Preheat oven to 350°, toast nuts for 5 minutes; begin preheating waffle iron
- Melt butter; some will be used for initial greasing of waffle iron
- Mash bananas and chop toasted nuts mix dry ingredients together in a large bowl
- Mix dry ingredients together in a large bowl, add melted butter
- Beat egg, combine egg and buttermilk
- Add nuts and bananas to batter, then add wet ingredients; stir just until combined
- Brush melted butter on waffle iron
- Pour 1/3 cup batter into each half of waffle iron, cook for approx. 2 min. 15 seconds
